Hospitality Quick Service NVQ Level II
 
What will I need to join the course?

Although there are no special entry requirements for this course, we do look for a good standard of education to enable you to cope with the necessary theory work and most importantly a genuine desire and enthusiasm to build a firm foundation for a career in the retail catering industry.

Pattern of attendance

Candidates will be required to attend Zest, the Kirkley Bistro one day per week.

How will my progress on the course be assessed?
Assessment will be carried out through a combination of the following methods:

  • Continuous assessment of practical skills both at the Kirkley Centre, ‘Zest Bistro’ and in the workplace
  • Portfolio of evidence
  • Completion of underpinning knowledge questions
What can I achieve?

City & Guilds NVQ Level II Hospitality Quick Service.

You must complete all of the following units:

  • Maintain a safe and secure working environment
  • Maintain and deal with payments
  • Customer care skills
  • Create and maintain effective working relationships
  • Clean food production areas, equipment and utensils
  • Maintain and promote hygiene in food storage, preparation and cooking

Candidates must complete a minimum of 1 unit from group 2, and 1 unit from group 3:

Group 2

  • Prepare hot/cold sandwiches and bread products
  • Prepare and cook coated fish
  • Prepare, assemble and cook pizza products
  • Prepare, cook and assemble burgers
  • Prepare, cook and present coated chicken

Group 3

  • Prepare and cook chipped potatoes
  • Prepare and fry food
  • Provide and maintain a counter/take away service
  • Receive, handle and store food deliveries
  • Prepare and serve hot drinks
  • Provide and maintain an automated drinks service
  • Prepare the service area and serve soft drinks
Key Skills

i) Application of number Level I
ii) Information Technology Level I
iii) Communication Level II
iv) Working with others Level II
v) Improving own learning and performance Level II

Basic Food Hygiene Certificate
Basic Health and Safety Certificate

And the future?

Students who complete the course can look forward to careers in the fast growing retail area of catering including work in food courts, café’s, café bars, fast food outlets and ‘in store’ restaurants. There are many opportunities in local and national establishments all of which recognise these professional qualifications.
